Csirkeleves or Tyukleves~ Hungarian Chicken Soup
Ingredients:
- 1 fat hen or chicken cut up (about 5 lbs.)
- 3 or 4 carrots, cut in sticks
- 1 or 2 parsnips, cut in sticks
- 1 small bunch fresh parsley or 2 tbsp. dried
- 1 small onion finely diced
- 2 cloves garlic diced
- 2 or 3 ribs of celery (optional)
- 1 small tomato diced
- 1 hot pepper finely chopped (Hungarian pepper if in season or Jalapeno)
- 4 qts. of water
- salt to taste
- 1/4 tsp. fresh ground black pepper
- 1 tbsp. homemade vegetable soup stalk mix or Vegeta
Method:
1. Joe doesn't like onion visible in his soup, so I will saute the onion until tender.
OR
3. Place everything - all the vegetables, spices and chicken in the pot.
4. Cook on medium (slow boil) until the chicken is tender. (2-3 hours or longer)
