Csirkeleves or Tyukleves~ Hungarian Chicken Soup

Ingredients:
  • 1 fat hen or chicken cut up (about 5 lbs.)
  • 3 or 4 carrots, cut in sticks
  • 1 or 2 parsnips, cut in sticks
  • 1 small bunch fresh parsley or 2 tbsp. dried
  • 1 small onion finely diced 
  • 2 cloves garlic diced
  • 2 or 3 ribs of celery (optional)
  • 1 small tomato diced
  • 1 hot pepper finely chopped (Hungarian pepper if in season or Jalapeno)
  • 4 qts. of water
  • salt to taste
  • 1/4 tsp. fresh ground black pepper
  • 1 tbsp. homemade vegetable soup stalk mix or Vegeta

Method: 

1. Joe doesn't like onion visible in his soup, so I will saute the onion until tender. 

2. Cook chicken in pot with water, skimming the scum off when starting soup to boil and then add all other ingredients. 

OR 

3. Place everything  - all the vegetables, spices and chicken in the pot.

4. Cook on medium (slow boil) until the chicken is tender. (2-3 hours or longer)
