Farmer Cheesecake (Túró rudi torta)


The name of this cake means something to only those who have tried the traditional Hungarian túró rudi. It is originally a Russian treat. How could I describe it...Sweet farmer cheese coated with chocolate. It doesn't sound the most delicious thing ever but it IS so good!! I don't even know anyone who doesn't like it!! And this cake tastes even better than the bar it got its name from!!
I've been wanting to make this cake ever since I saw the recipe. It is in Hungarian so I might as well translate it to English.
It is similar to cheesecake but different. Explaining myself today is not going very well...Apperently. So it has a brownie base. Oh my god, it is just the best like this!! So much better than if it was a cookie base. So on that lovely brownies there is a layer of sweet farmer cheese cream then comes a thin layer of chocolate. After that comes another layer of farmer cheese cream and then the top chocolate layer. Since I felt really generous with adding chocolate my top layer got pretty thick, therefore cutting the cake AND getting it out of the form was tricky. This is why the piece is not so pretty. Oh well, tastes wonderful!!!
Farmer Cheesecake (Túró rudi torta)

for a 23cm cake form

For the brownies
66 g chocolate
66 g butter
85 g sugar , I used brown cane sugar
1 egg
36 g flour , whole wheat flour

For the cream
2X 300 g farmer cheese (because there are 2 layers of the cream)
2X 1,5 dl double creme
2X 35 g sugar
2X half teaspoon gelatin
2X half lemon's zest, I didn't have lemon so I used lime

170 gram chocolate, the darker the better

To make the brownies, preheat the oven to 180C. Melt the chocolate and set aside. Cream the soft butter with the sugar then add the egg and the flour in. When it looks creamy add the chocolate, pour the mixture in the cake form and bake it for 20 minutes.

When the brownies are ready, let it cool down and make the farmer cheese cream.

For the 1st layer: stir the gelatin with the double cream on the heat. Stir it until the gelatin dissolves. Take it off the heat and add the lemon zest and sugar. Mix it together and then comes the farmer cheese. Mix it together until creamy. Spread it on the brownie base and put it in the fridge for at least an hour.

It's okay if it looks like this. Not so creamy. It will even out.

After an hour, melt 70 gram chocolate with a little oil and spread on the cheese cream. Then put it back in the fridge and let's start making the 2nd layer of the farmer cheese cream. It goes the same as the 1st layer.
When it's ready, spread it on the chocolate and put it back in the fridge for a few more hours.

An hour before serving, melt 100 g chocolate with a little oil. Pour it on the cake and refridgerate it.
